Garden Herb Flatbread

This is a simple, lazy afternoon weekend tea-time snack. The family woke up later than usual, and by the time we had breakfast, it was already in the afternoon.  So nobody wants any lunch.  Look for something to make as a tea-time snack, and found this simple to do flatbread. It is indeed a garden herb flatbread.  All the herbs can be found in my garden, except for the oregano!   Open up a can of Campbell's mushroom soup (I always keep one for lazy times like this!), and there we go, the kids happily enjoy their snack!  There's even a request again for 'next time'!











Garden Herb Flatbread
(adapted from "Biggest Book of Bread Machine Recipes" by Better Homes and Gardens)
For 1-1/2 Pound :
Ingredients :
1 cup milk
1/2 cup sliced green onion
3 tbsps olive oil or cooking oil
1/4 tsp bottled minced garlic
3 cups bread flour
1 tbsp sugar
2 tsps snipped fresh oregano or 1/2 tsp dried oregano, crushed
2 tsps snipped fresh thymes or 1/2 tsp dried thyme, crushed
2 tsps snipped fresh sage or 1/2 tsp dried sage, crushed
3/4 tsp salt
1 tsp active dry yeast or bread machine yeast
2 tbsps olive oil or cooking oil
2 tsps snipped fresh thyme or 1/2 tsp dried thyme, crushed

Method :

  1. Add the first 11 ingredients to the machine according to the manufacturer's directions.  Select the dough cycle.  When cycle is complete, remove dough.  Punch down.  Cover and let rest for 10 minutes.  Grease 2 baking sheets or 12 inch pizza pans; set aside
  2. Divide the dough in half.  On a lightly floured surface, roll each portion into a 12-inch circle.  Transfer to the prepared baking sheets.  Brush the dough with the 2 tablespoons olive oil.  Using a fork, prick the entire surface of each circle several times.  Sprinkle with 2 teaspoons fresh or 1/2 teaspoon dried thymes.  Do not let rise.
  3. Bake in a 400 degree F oven for 11 to 13 minutes or until crisp and golden brown.  Remove from baking sheets, cool slightly on wire racks.  Serve warm or cool.
(my notes : I think that an additional 1/8 tsp of salt would be recommended, as I feel that it is not salty enough, unless you are dipping it in very salty soup!)
